It has been, what seems like YEARS - since I last blogged. These last few months have really slipped away. Life has been busy, to put it lightly. Lots of change on the horizon, which is perfect because I have always looked at fall as the season of change. It is my favorite season, all of the beautiful colors, the crisp air and of course all the CLOTHES. I am a sucker for layering old tee's, silk, skinny jeans and sweaters - Aritzia does fall best, here are a few of my favorites:

D I N N E R

I have been a vegetarian for a little over 2 years now. I am too much of an animal lover to support the industry, especially factory farms. I am not here to preach my beliefs and tell my readers what to eat but I want to share things that I enjoy. One of my greatest joys is cooking - I love experimenting with new recipes and finding things that both Robby and I like. Keeping the food we eat healthy is one of the most important things to me, I want us to be around for as long as possible ... living a healthy and above all happy life together. I want to share one of my go to recipes - lentil chili from Forks Over Knives (great documentary, book and cookbook - visit their site here). It is super easy, delicious and very healthy - not to mention so filling! 

Ingredients:

1 large yellow onion, chopped
2 Bell peppers, chopped
2 celery stalks, chopped
2 large carrots, sliced
4 cups vegetable broth
2 cups water
3 TB chili powder (I like it spicy)
2 tsp. cumin
1 tsp. paprika 
2 TB extra virgin olive oil
1/2 tsp. cayenne pepper
2 cups green lentils, rinsed
1 28 oz. can crushed tomatoes (I prefer San Marzano, my best friend, Mary, turned me on to these and they make a H U G E difference)
1 15 oz can kidney beans
Zest & juice of 1 lime



Chop all vegetables and put in a large soup pot.

Over medium-high heat, saute onion, celery, carrots and bell pepper in extra virgin olive oil. Stir occasionally and cook until soften, approximately 5-7 minutes.

Add chili powder, cumin, paprika, cayenne pepper, garlic powder and cook for an additional minute, stirring well.


Add lentils, crushed tomatoes, kidney beans, vegetable broth and water. Bring to a boil then cover and simmer for approximately 45 minutes, stirring occasionally. Once lentils are fully cooked zest lime and add juice.

I like to garnish mine with cheese and green onion. Serve with corn chips ... enjoy!

One pot will last us 1 week in the fridge!

S A S Q U A T C H

I am sad to say that we aren't going to Coachella anymore. I am totally bummed but there were no available hotels anywhere close to the festival .. it would have been so much driving. S O now this is my plan for Sasquatch!

Since we decided that Coachella was a no go, we have concentrated on planning a trip to LA and also Sasquatch music festival. I am in desperate need of a vacation, I need to get out of this dreary, gray weather and soak up some vitamin D. The line up this year at Sasquatch is fantastic, but LA will be even better!

I have started planning my must haves for spring around our trip and here is what I have come up with so far:

Alexander Wang Tank - I know I have already posted this tank, but it is such a great basic and will be perfect with some denim cut off shorts.
Sam Edelman Petty Boots - These are my favorite boots and a staple in my wardrobe. I wear my petty boots everyday and will eventually own every color <<color shown above is putty>> ... These look so cute with a dress, shorts or jeans ... I think everyone needs these.
Converse Chuck Taylors - The most basic sneaker, very affordable and super comfortable. We will be on our feet a lot and these will be my saving grace.
H&M Denim Cut Offs - I have a hard time spending a lot on shorts. We have more rainy days than not in Seattle and I can't justify pricey shorts. These are of decent quality and fit great, can't beat the price! <<they don't have these on the U.S. site yet>>
Karen Walker Sunglasses - I absolutely love these sunglasses, I need them - I like the light ones too!
Madewell Two-Tone Chambray - I love color block and I love denim, so clearly I need this too.
Madewell Metalcraft Necklace - I was walking through madewell the other day and this necklace stopped me in my tracks. It is so beautiful and unique!
Madewell Flatweave Bracelet - I love these bracelets, they look so cute stacked or wear them alone. They also make perfect friendship bracelets :)

Wilfred Lazare Dress - I recently purchased this silk dress, in black, and I cannot wait for the weather to get nicer ... I fits beautifully and I love the high-low trend right now.
T. Babaton Erin Sweater - I love this sweater, it looks so cute over the Lazare dress or with some jeans/denim shorts. It has lenin in it so it will be perfect for the desert heat, especially once the sun goes down.
TNA Del Mar T-Shirt - I love baseball tees, throw on some chucks and some cut offs - perfect summer outfit. P.S. You can find baseball tees like this for $5 at Big5 Sporting Goods.

My biggest weakness is pillows. 

Whenever I go into home stores I am always drawn towards the pillow section - it is the easiest way to update any room and add color. I always say stick to basics when shopping for furniture and add texture with pillows, throws and rugs. 

All three of these pillows are from onekingslane. I drool over this website daily, there is always at least 1 thing I fall in love with. They also have great vintage finds .. great price point and ship relatively fast.
